With the arrival of new chef Roberto Stella, who took the helm at the beginning of the season, the dining at Hotel Windsor in Laigueglia and its beach club has shifted into high gear. Winner of the Cà Maiol Award as best beach club restaurant 2025 for Liguria, restaurant Savo has not only confirmed the good things we had already observed in the first years of management after the reopening of this historic hotel on the western Ligurian Riviera under the ownership of Alessandro Sironi – already appreciated as a hotel entrepreneur on Lake Como with the Filario in Lezzeno – but has proven even more convincing thanks to the contribution of the Turin-born chef, born in 1991, who arrived in Laigueglia after being a protagonist in Turin as resident chef in the kitchens of restaurant La Pista and having previously worked with fine dining giants like Fabrizia Meroi of Laite in Sappada (Udine) and Fabrizio Tesse at Carignano of Grand Hotel Sitea, also in Turin.

Among the dishes on the menu, those that mix seafood and meat stand out, such as the Veal terrine with purple prawn crudo, Piedmontese ketchup, and sea beans. And then, the Guinea fowl with scallop, peach, vadouvan and baby spinach. The lunch menu offers lighter dishes suitable for the beach, like traditional Ligurian trofie, octopus with eggplant ‘nduja and mint, and white fish tartare pizzaiola-style with sea chips. Finally, there’s the beach menu with dishes, snacks, tempura and the exquisite tiramisu served in a glass.

Worth trying this summer is Wednesday evening, which opens at 7:00 PM with jazz aperitifs on the beach, featuring dedicated cocktails in collaboration with companies like Masottina, Select and Fabbri 1905. This is followed by musical accompaniment during dinner as well.

Otherwise, Laigueglia remains splendid and Windsor’s beach, also open to external guests with its 40 spots compared to 25 rooms that are almost always fully booked, confirms itself as the most beautiful in this village, one of Italy’s most beautiful, and in the entire western part of the Alassio riviera, a city just a few kilometers from Laigueglia. The hotel’s clientele is predominantly international and standards are aligned with this target’s needs in terms of design, service, and comfort. Prices for a beach spot start from 25 euros in low season and rise up to 80 in August, with two sun loungers and a director’s chair available to guests. Reservations can also be made online.
