Four Seasons open its ‘osteria’ at Alpemare

It’s called Onde, it’s the seaside osteria of Four Seasons Hotel Firenze and in July it will be featured at Alpemare in Forte dei Marmi, which for the third year has won the title of best beach club in Italy, this year tied in the luxury category, awarded by the Guide to Italy’s Best Beach Clubs.

As announced directly by Four Seasons, the restaurant concept arrives “right where the restaurant’s concept was conceived. The special summer residency will be hosted at Alpemare, the iconic beach club of tenor Andrea Bocelli and his family. Here, the collaboration will unfold through a series of seaside dinners, where Onde will present with nostalgic sensibility the great classics of Italian summer tradition, enhancing seasonal ingredients to evoke the effortless elegance of evenings by the sea”.

For the occasion, executive chef Paolo Lavezzini and restaurant chef Giacomo Cavicchi from Four Seasons Hotel Firenze collaborate with Alpemare chef Mirko Caldino to bring Onde’s cuisine to the seaside, along with new creations born from this encounter. Inspired by the convivial approach that defines Onde, the menu invites guests to share dishes including the essential Onde raw fish appetizer, Paccheri with seafood, and one of the restaurant’s most beloved offerings, grilled sea bass served with crispy skin. Desserts complete the experience with fresh, summery flavors, perfect for accompanying long evenings on the beach.

Throughout July, Alpemare will host Onde during weekend dinners, for selected dates: July 3-4, July 10-11, July 16-17, July 24-25, July 31 and August 1.
